Mason, at 6am the other morning, crawled into bed with Susan and me and asked:

“How do you make Salsa?”

    Just make sure it’s pace picante or they might get the rope..

    8 or 10 medium to large tomatoes

    2 medium onions

    3 whole jalapeno peppers or to taste

    garlic salt to taste

    2 or 3 capfuls of red wine vinegar

    1 tablespoon of cilantro

    Dice tomatoes and onions,
    Slice jalapenos in half long ways then chop pretty small.
    Put these ingredients in a bowl, then add remaining ingredients on top. Stir well. Serve with chips, pretzels, on eggs, whatever.

    This is a pretty good mix of needed items.
    You can double, triple
    them as per your needs. Sometimes I make this amount, sometimes I start with a crateful of tomatoes.
    Start slow with the jalapenos, you can always add more, but it’s kind of hard to take the hot out once it’s there. But if you do make it too hot, add a little more of the red wine vinegar and it will chill down somewhat.
